Hey friends! Ashley here. If your household is anything like mine, when you commit to smoking a pork shoulder, you aren’t just making dinner—you’re making a lifestyle choice for the next three days. We love a good BBQ night, but by day two of pulled pork sandwiches, the excitement starts to wane just a little bit. That is exactly why I am obsessed with this Homemade Chili with Pulled Pork. It is the ultimate “imperfectly perfect” way to breathe new life into those leftovers. It’s smoky, hearty, and tastes like it’s been simmering on a ranch stove for days, even though it’s one of the easiest ways to clear out your fridge.

Why This Pulled Pork Chili Will Be Your New Favorite Way to Use Leftovers
I used to think that chili had to start with a pound of ground beef, but once I tried it with smoked pork, I never looked back. The texture is richer, the flavor is deeper, and it feels a whole lot more “gourmet” than your average weeknight bowl.
- The Ultimate “Smoked” Cheat Code: If you’re using leftover pulled pork from a smoker, you’ve already done the hard work of infusing that meat with incredible wood-fired flavor. This chili just lets those notes shine.
- A True Meat-Lover’s Dream: This is a meat-heavy, thick-style chili. Because we’re using up to 4 pounds of pork, every spoonful is packed with protein and smoky goodness.
- The One-Pot Wonder: From sautéing the veggies to the final simmer, everything happens in one large pot. Less cleanup means more time to actually enjoy your evening.
- Depth of Flavor via “The Secret Ingredient”: We use a full 12-ounce beer to deglaze the pot. It adds a malty, complex backbone to the sauce that water or broth just can’t replicate.
- High-Volume Value: This recipe makes a massive pot. It’s perfect for game days, feeding a crowd, or stocking the freezer for those “I don’t want to cook” nights later this winter.
The beauty of this chili is that it’s incredibly forgiving. It’s “imperfectly perfect” because the exact amount of pork doesn’t matter, and the bean choice is totally up to you. It’s a soulful, comforting meal that respects the effort you put into that original smoke session.
Ingredient Spotlight: Smoky, Savory, and Seriously Satisfying
The star of the show is the 4 lbs of pulled pork. Now, I say 4 pounds because we like our chili thick enough to stand a spoon in, but if you only have 2 pounds left in the fridge, go ahead and use it! The smoky bark from the pork shoulder acts as a seasoning agent for the entire pot. If you don’t have leftovers, you can always grab some pre-shredded pork, but there’s nothing quite like the flavor of home-smoked meat.
To build our flavor base, we use a classic trio: 2 white onions, 2 bell peppers, and 2 tablespoons of minced garlic. I love the sweetness that bell peppers bring—they balance out the acidity of the tomatoes and the saltiness of the pork. For the “liquid gold,” we’re using a combination of 28 oz of tomato sauce and 28 oz of crushed tomatoes. This gives us a thick, rich base that isn’t too watery.
Then, there’s the spice cabinet. We are going bold here: chili powder, cumin, paprika, salt, and black pepper. It’s a classic blend that provides a warm, comforting glow without being so spicy that the kids won’t touch it. And of course, the 12 oz of beer. A darker beer like Guinness or a classic Yuengling adds a toasted, nutty flavor that works beautifully with the smoke of the pork.

Let’s Cook! Simple Steps to a Show-Stopping Chili
- Sauté and Aromatics: Start by heating your large pot over medium heat with a splash of olive oil. Toss in your minced garlic and let it sizzle for just a minute until your kitchen smells like heaven. Add in your diced onions and bell peppers. This 10-minute prep and sauté phase is crucial—you want the veggies to be soft and translucent so they melt into the sauce later.
- Season and Deglaze: Once the veggies are soft, stir in all your seasonings (chili powder, cumin, paprika, salt, and pepper). Toasting the spices with the veggies for a minute helps wake up those oils. Now for the fun part: pour in the 12 oz of beer. Use your spoon to scrape up any of those delicious browned bits on the bottom of the pot. Let it simmer for about 10 minutes to reduce slightly and concentrate the flavor.
- The Meat and Tomato Toss: Add in your pulled pork and stir it well so every strand of meat is coated in that spiced beer reduction. Next, pour in your tomato sauce, crushed tomatoes, and both cans of beans (make sure to drain and rinse the Kidney and Northern beans first!). Give it a big, hearty stir to combine.
- The Low and Slow Simmer: Turn the heat down to low. This is where the magic happens. Let the chili simmer for at least one hour. You’re looking for the sauce to thicken and the flavors to fully meld together. If you have the time, let it go even longer! The longer it sits, the more that smoky pork flavor will infuse the tomatoes. Serve it up hot with all your favorite fixings!
Ashley’s Pro-Tips: Customizing Your “Imperfectly Perfect” Bowl
Chili is a personal thing, and here at Ashley Bakes Easy, we believe you should make it exactly how you like it. If you’re a “no-bean” chili household, just leave them out! The 4 pounds of pork provides more than enough bulk to keep this satisfying. If you love beans, feel free to swap the Kidney beans for Black beans or Pinto beans—whatever you have in the pantry is the right choice.
If you find that your pork was particularly salty from the dry rub you used on the smoker, go easy on the added salt in the beginning. You can always add more at the end, but you can’t take it away! Taste as you go—that’s the mark of a true home cook. If you want a little more kick, this is the perfect time to dice up a jalapeño and toss it in with the onions, or add a pinch of cayenne if you’re feeling brave.
Finally, think about the texture. If you like a very “shredded” chili, you can break the pork down more with your spoon as it simmers. If you like big, meaty chunks, leave it as is. This recipe is meant to be a stress-free way to use what you have, so don’t sweat the small stuff!
Storage and Reheating: The Flavor That Only Gets Better
Like most stews and chilis, this Pulled Pork Chili is a superstar in the fridge. The flavors actually continue to develop overnight, making the leftovers even better than the first bowl. It stays fresh in an airtight container for up to 4 days.
This is also an incredible freezer meal. I like to freeze it in individual portions or large freezer bags (laid flat to save space!). When you need a quick dinner, just thaw it in the fridge overnight and heat it up on the stove. It’s like a gift to your future self on a cold, busy Tuesday.
When reheating, if the chili has thickened up a bit too much in the fridge, just add a small splash of water or some extra tomato juice to loosen it up. It will come right back to life with a few minutes over medium heat.
A Little Joy on Top
At the end of the day, a bowl of chili is more than just a meal—it’s a hug in a bowl. Using leftover pulled pork is a reminder that we can be resourceful and still produce something that feels absolutely gourmet. It’s about taking the work you did over the smoker and turning it into a completely new experience for your family.
I truly hope this chili brings a sense of warmth and ease to your table. Whether you’re watching the big game or just winding down after a long day, there’s nothing quite like that first smoky, savory bite. If you give this a try and find a new way to top it, I’d love to hear about it! Happy simmering, y’all!
