Hello from the Ashleybakeseasy

Lorem Ipsum is simply dummy text of the printing and typesetting industry. Lorem Ipsum has been the industry’s standard dummy text ever since the 1500s, when an unknown printer took a galley of type and scrambled it to make a type specimen book. It has survived not only five centuries, but also the leap into electronic typesetting, remaining essentially unchanged. It was popularised in the 1960s with the release of Letraset sheets containing Lorem Ipsum passages, and more recently with desktop publishing software like Aldus PageMaker including versions of Lorem Ipsum.

FAQs About Ashleybakeseasy

Sandwiches! I could eat a sandwich every day of my life forever and never get sick of it. I love a with cheese, lots of lettuce, oil and vinegar, and mayo. Add some banana peppers or onions and I’m in heaven. Also a big fan of a crispy BLT on toasted sourdough with fresh heirloom tomatoes in the height of summer. And of course, I enjoy a classic club sandwich as well.

Surprisingly, cooking is still one of my favorite things to do! However, I find following recipes and measuring ingredients very restrictive (I recognize the irony here) so as an act of rebellion, I find it freeing to cook without them! I love experimenting with seasonal ingredients and if I find a yummy combination, I try to recreate it for the blog. I also love spending time with family and friends, traveling, hiking, reading, thrift shopping, going for walks, and trying new restaurants.

Literally, this. I love creating in the kitchen, photographing, editing, and then telling you all about my favorite recipes. I never dreamed that I would be lucky enough to do this every day and get paid for it.

I worked in hospital administration for many years before leaving healthcare to blog. I really enjoyed working with providers and helping them with their administrative duties. I love organization, schedules, and order so I found that to be a good fit for me.

Once my blog income exceeded our regular income and we had a little nest egg in savings, we planned to quit our jobs in late summer 2020. But the panorama had other plans for us! The silver lining of the panini was that more folks were stuck at home cooking which meant more people visiting the blog which meant more income for us. It also meant that the restaurant my husband was cooking at closed down. And the administrative role I had suddenly became a patient-facing role which wasn’t ideal in the midst of the pandora. So I resigned and on my birthday in May 2020, we took the blog full-time! We felt confident in doing so because we had paid all our debt off (except our mortgage) and had enough in savings to last 6 months if anything happened. Everyone has a different comfort level, but that felt safe for us.

If you follow along on Instagram, you know that in the summer of 2021, we sold our house and almost everything we owned, packed what we could fit in our car, and drove across the country to move to Portland, Oregon! We enjoyed 4 wonderful years there and in the summer of 2025 we moved to California! However, I won’t be changing my blog name anytime soon 🙂 While I am in love with the West Coast, I am still cooking up delicious Midwest comfort food!
