This turkey goulash is built on simple, affordable ingredients that pack a serious flavor punch:

Ground turkey — one pound of lean ground turkey is the protein backbone of this dish. It’s lighter than beef but every bit as satisfying when cooked with all these bold flavors. Make sure to cook it through before adding the other ingredients!

Protein pasta — one pound of high-protein pasta (chickpea, lentil, or any brand you love) cooks right in the pot, soaking up all the tomato goodness. If you can’t find protein pasta, regular pasta works great too — just know you’ll be getting less protein per serving.

Double tomatoes — one can of diced tomatoes AND one can of tomato puree creates a rich, layered sauce. The diced tomatoes add texture while the puree creates a velvety base that coats every piece of pasta perfectly.

The secret ingredient — maple syrup — just one tablespoon! It cuts the acidity of the tomatoes and adds a subtle warmth that takes this sauce from good to “can I have more?” Good. Trust me on this one!

Cheddar cheese — a generous cup and a half of shredded cheddar stirred in at the end makes this goulash incredibly creamy and rich. Freshly shredded melts much better than the pre-shredded bag variety, so if you have a few extra minutes, it’s worth it!

Let’s Cook!

  1. Step 1: Heat oil in a large pot over medium heat. Add diced onion and green pepper. Cook 3 minutes until softened.
  2. Step 2: Add minced garlic and cook 1 more minute, stirring constantly.
  3. Step 3: Add ground turkey and cook, breaking apart with a spoon, until cooked through — about 6–8 minutes.
  4. Step 4: Add diced tomatoes, tomato puree, chicken broth, maple syrup, oregano, basil, paprika, salt, and pepper. Stir to combine.
  5. Step 5: Add pasta, stir well, and bring to a boil. Cover with a lid and cook on medium for 8–10 minutes, stirring occasionally, until pasta is tender.
  6. Step 6: Remove from heat, stir in shredded cheddar until melted and creamy. Serve hot!

Ashley’s Pro-Tips

Don’t skip the maple syrup — it sounds weird but it completely transforms the tomato sauce. Just one tablespoon makes a huge difference!

Stir during pasta cooking — check and stir every few minutes to prevent the pasta from sticking to the bottom of the pot.

Add broth if needed — if the pasta absorbs too much liquid before it’s fully cooked, just add a splash more broth and keep going.

Shred your own cheese — pre-shredded cheese has anti-caking agents that can make the sauce grainy. Freshly shredded melts into pure silk!

Storage & Pairing

Fridge: Store in an airtight container for up to 4 days. Add a splash of broth when reheating to loosen the sauce back up.

Freezer: Freeze for up to 3 months. Pasta-based dishes can get a little softer after freezing, but the flavor is still excellent.

Serve with: Crusty bread, a simple green salad, or garlic toast. Leftovers make an amazing packed lunch the next day!
