  • 2 3/4 cups all-purpose flour or GF flour blend for gluten-free option
  • 1 1/4 cups granulated sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp poppy seeds
  • 3 large eggs
  • 3/4 cup olive oil use a mild or light olive oil for best flavor
  • 1 1/4 cups milk or nut milk / water for dairy-free option
  • 1/2 cup orange juice freshly squeezed preferred
  • 1 tsp vanilla extract
  • 2-3 tbsp orange zest from about 2 large oranges

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan or a 10-cup bundt pan with non-stick spray and set aside.
  2. Mix the dry ingredients — In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and poppy seeds until evenly combined.
  3. Combine the wet ingredients — In a separate bowl or large measuring cup, whisk together the eggs, olive oil, milk, orange juice, vanilla extract, and orange zest.
  4. Bring it together — Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix — a few small lumps are totally fine!
  5. Pour and bake — Transfer the batter to your prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
  6. Cool before serving — Let the cake cool in the pan for at least 15 minutes before slicing. Dust with powdered sugar or drizzle with an orange glaze if desired.
