Ingredients
  

Chicken
  • 1 lb rotisserie chicken shredded or diced (mix of white and dark meat)
Orange Sauce
  • 1/2 cup fresh orange juice about 2 large oranges
  • 1 tbsp orange zest do not skip!
  • 3 tbsp soy sauce
  • 1/4 cup rice vinegar
  • 3 tbsp brown sugar
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp chili garlic sauce adjust to taste
  • 1/2 tsp red chili flakes optional
  • 2 tsp cornstarch
  • 1 tbsp oil for the skillet
For Serving
  • sesame seeds for garnish
  • sliced green onions for garnish
  • steamed rice

Method
 

  1. Shred or dice the rotisserie chicken and set aside.
  2. In a bowl, whisk together orange juice, zest, soy sauce, rice vinegar, brown sugar, garlic, ginger, chili garlic sauce, red chili flakes, and cornstarch until sugar and cornstarch dissolve.
  3. Heat oil in a wide skillet over medium heat. Pour in the sauce and stir constantly for 2-3 minutes until it thickens into a glossy glaze.
  4. Add chicken to the skillet and toss gently to coat. Heat through for 3-4 minutes. Garnish with sesame seeds and green onions. Serve over steamed rice.
