Scones
  • 2 cups whole wheat flour fresh-milled soft white wheat preferred
  • 1/4 cup cold unsalted butter cubed
  • 1/2 cup mashed ripe banana about 1 medium very ripe banana
  • 1/4 cup milk plus a little extra if needed
  • 1 large egg
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Maple Glaze
  • 1 cup confectioners' sugar
  • 2 tbsp pure maple syrup
  • 1-2 tbsp heavy cream or milk, to consistency

Method
 

  1. Preheat oven to 400°F. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  2. Add cold cubed butter and cut it in with a pastry cutter or fork until the mixture looks like coarse crumbs with some pea-sized butter pieces.
  3. In a separate bowl, mash banana and whisk in milk, egg, and vanilla. Pour wet ingredients into dry and fold gently until just combined. Do not overmix.
  4. Turn dough onto a floured surface and pat into a 1-inch thick circle. Cut into 8 wedges and place on a lined baking sheet.
  5. Bake 15-20 minutes until lightly golden. Cool 5 minutes. Whisk glaze ingredients and drizzle generously over warm scones.
