Ingredients
  

  • 4-5 medium potatoes diced into bite-sized pieces
  • 1 medium onion diced
  • 2 tbsp minced garlic
  • 2 tbsp tomato paste
  • 2 bags (12 oz each) frozen vegetables peas/carrots/corn mix or California blend
  • 4-6 cups beef broth or vegetable broth
  • 2 tsp Italian seasoning
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until soft. Add garlic and cook 1 minute.
  2. Push tomato paste to the center of the pot and toast for 1 minute, then stir into the onion mixture.
  3. Add diced potatoes and broth. Season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer 12-15 minutes until potatoes are nearly tender.
  4. Optional: For a thicker soup, ladle some potato and broth into a blender or use an immersion blender, then stir back into the pot.
  5. Add frozen vegetables and cook 5-7 minutes until heated through. Taste, adjust seasoning, and serve.
