Easy Sweet Potato Lentil Tots Recipe

Vegan, gluten-free adaptable, and BLW-friendly homemade sweet potato lentil tots — baked golden and crispy, loaded with fiber and protein. Make a big batch and freeze for later!

  • 1 cup mashed sweet potato about 1 medium sweet potato, baked or microwaved and peeled
  • 0.5 cup red split lentils uncooked
  • 1 cup vegetable broth no salt added
  • 0.5 teaspoon paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.33 cup panko breadcrumbs or gluten-free breadcrumbs or almond flour
  • 1-2 teaspoons olive oil
  • 0.5 teaspoon salt optional — omit for babies

Method
 

Instructions
  1. Preheat oven to 400°F. Pierce sweet potato with a fork and bake 45–50 minutes, or microwave 6–10 minutes until soft. Let cool, peel, and mash until smooth.
  2. Cook lentils: add to a saucepan with vegetable broth and bring to a boil. Reduce heat, cover, and simmer 15 minutes until liquid is almost absorbed. Remove from heat and rest, covered, for 10 minutes.
  3. Combine mashed sweet potato, cooked lentils, paprika, onion powder, garlic powder, panko, and optional salt in a bowl. Mix well with hands or a spoon.
  4. Form into approximately 18 small croquettes, about 2 inches long and 1 inch thick. Place on a parchment-lined baking sheet.
  5. Brush or spray lightly with olive oil over the tops.
  6. Bake at 400°F for 15–20 minutes, flipping halfway through, until golden and slightly crispy on the outside. Cool slightly before serving.
