Easy Slow Cooker Kielbasa Stew Recipe

A hearty dump-and-go slow cooker stew with smoky kielbasa, Great Northern beans, colorful veggies, and a rich tomato broth. Perfect for busy weeknights!

Ingredients
  

  • 4 kielbasa sausages sliced into 1/2-inch rounds
  • 1 can (15 oz) Great Northern beans do not drain
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 4 medium carrots diced into coins
  • 1 medium yellow onion diced
  • 1 medium yellow bell pepper diced
  • 3 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • salt and pepper to taste

Method
 

  1. Dice the yellow onion, bell pepper, and carrots. Slice kielbasa into 1/2-inch rounds.
  2. Add kielbasa, vegetables, beans (with their liquid), Rotel, and tomato paste to the slow cooker. Sprinkle in garlic powder, thyme, salt, and pepper. Stir well to combine.
  3. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  4. About 30 minutes before serving, taste and adjust seasoning. Serve in big bowls, optionally with crusty bread.
