Method
- Dice the yellow onion, bell pepper, and carrots. Slice kielbasa into 1/2-inch rounds.
- Add kielbasa, vegetables, beans (with their liquid), Rotel, and tomato paste to the slow cooker. Sprinkle in garlic powder, thyme, salt, and pepper. Stir well to combine.
- Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- About 30 minutes before serving, taste and adjust seasoning. Serve in big bowls, optionally with crusty bread.
