Ingredients
  

  • 4 sweet potatoes sliced into ¼-inch rounds
  • 2–3 tablespoons olive oil
  • 3 tablespoons honey plus more for drizzling
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried basil
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • crumbled feta cheese for topping, to taste

Method
 

  1. Preheat your oven to 425°F. Wash and slice sweet potatoes into ¼-inch rounds — no need to peel, the skin crisps up beautifully.
  2. Add sliced sweet potatoes to a large bowl. Drizzle with oil and 3 tablespoons of honey. Toss until every piece is well coated.
  3. Sprinkle in garlic powder, salt, black pepper, dried basil, paprika, and cayenne. Toss again until the spices are evenly distributed.
  4. Arrange potato slices in a single layer on a large lined baking sheet. Don't overlap — they need room to roast, not steam.
  5. Bake at 425°F for 20 minutes, until edges begin to brown and the honey starts to caramelize.
  6. Carefully flip each slice and bake for an additional 15–20 minutes, until both sides are caramelized and fork-tender.
  7. Remove from the oven, drizzle with extra honey, and crumble feta generously over the top. Serve warm.
