Ingredients
  

Turkey & Vegetables
  • 1 turkey breast bone-in or boneless, about 3–4 lbs
  • 1 lb Brussels sprouts halved if large
  • 5 carrots sliced
  • 2 tablespoons olive oil
  • salt and black pepper heavy seasoning for the turkey
Honey-Balsamic Glaze
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1 1/2 teaspoon dried thyme
  • 1 1/2 teaspoon dried rosemary
  • 1 1/2 teaspoon salt

Instructions
  1. Preheat your oven to 350°F. Pull out a large 9×13-inch baking dish and set it on the counter.
  2. Pat the turkey breast dry with paper towels. Season it HEAVILY on all sides with salt and black pepper — don't hold back, this is your first flavor layer.
  3. Add the Brussels sprouts and sliced carrots to the baking dish and spread them out in an even layer.
  4. Place the seasoned turkey breast on top of the vegetables in the baking dish.
  5. In a small bowl, whisk together the honey, balsamic vinegar, olive oil, thyme, rosemary, and salt until well combined.
  6. Pour the honey-balsamic glaze generously over the turkey breast, letting any excess drip down onto the veggies below.
  7. Roast uncovered at 350°F for 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the turkey reads 165°F. Tent loosely with foil if the top browns too quickly.
  8. Remove from the oven and let the turkey rest for at least 10 minutes before slicing. Slice against the grain, arrange with the roasted veggies, and spoon pan drippings over the top before serving.
