  • 3 tablespoons unsalted butter
  • 1 cup heavy cream or half-and-half for a lighter sauce
  • 4 cloves garlic minced
  • 1.5 cups freshly grated Parmesan cheese refrigerated kind, not shelf-stable
  • salt and freshly cracked pepper to taste
  • 0.25 teaspoon freshly grated nutmeg optional but recommended

  1. In a medium saucepan over medium-low heat, melt the butter completely.
  2. Add the heavy cream and bring to a gentle simmer — light bubbling around the edges, not a full boil. Cook, whisking often, for about 5 minutes until the cream begins to thicken slightly.
  3. Add the minced garlic and cook for exactly 1 minute, whisking constantly until fragrant.
  4. Add the grated Parmesan in 2–3 additions, whisking constantly after each until fully melted before adding more. This prevents clumping and ensures a silky-smooth sauce.
  5. Season generously with salt and freshly cracked pepper. Add nutmeg if using, starting with 1/4 teaspoon.
  6. If sauce is too thick, add a splash of cream or reserved pasta water and whisk to combine. Toss immediately with hot cooked pasta and serve right away.
