Ingredients
  

Veggies
  • 2 sweet potatoes diced
  • 2-3 yellow potatoes diced
  • 4 carrots sliced
  • 1/2 onion sliced
Honey Herb Glaze
  • 3 tbsp honey
  • 3 tbsp oil plus more for the pan
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • salt and pepper to taste

Method
 

Instructions
  1. Preheat your oven to 450°F.
  2. Dice the sweet potatoes, dice the yellow potatoes, slice the carrots, and slice the onion into similar-sized pieces.
  3. In a large bowl, combine all the veggies. Pour in the honey and oil and toss until well coated. Add the dried parsley, thyme, rosemary, salt, and pepper, then toss again until every piece is evenly seasoned.
  4. Heat a drizzle of oil in a cast iron skillet over medium-high heat. Add the seasoned veggies in an even layer. Cook for 12–15 minutes, stirring occasionally, to build that golden crust on the stovetop.
  5. Carefully transfer the cast iron skillet to the preheated oven. Roast for an additional 15–20 minutes, or until the veggies are fork-tender and beautifully caramelized. Serve hot and enjoy!
