Ingredients

  • 1 box pasta (any shape: penne, rigatoni, ziti)
  • 1 lb ground beef
  • 1 onion (diced)
  • 2-3 cloves garlic (minced)
  • 8 oz cream cheese (cubed)
  • 1 jar pasta sauce (your favorite marinara)
  • 2 cups mozzarella cheese (shredded)
  • 2 tbsp oil (for cooking)
  • 1/4 tsp cayenne pepper (optional)
  • salt and pepper to taste

Equipment

  • Large pot for boiling pasta
  • Large skillet or frying pan
  • 9x13 baking dish

Method

  1. Boil the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain well and set aside.
  2. Cook the Aromatics and Meat: While pasta cooks, heat 2 tablespoons of oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent. Add the ground beef and cook, breaking it up with a spoon, until completely browned. Drain excess fat if needed.
  3. Add Flavor: Stir in the minced garlic and spices (salt, pepper, and cayenne if using). Cook for about 1 minute until fragrant.
  4. The Creamy Magic: Cut the cream cheese into small cubes and add to the hot beef mixture. Stir gently until the cream cheese melts completely and creates a smooth, creamy sauce.
  5. Combine Everything: Preheat oven to 375°F. Grease a 9x13 baking dish. Add the cooked pasta, jar of pasta sauce, and creamy beef mixture to the dish. Gently fold everything together until the pasta is well coated. Spread evenly in the dish.
  6. Top with Cheese and Bake: Sprinkle the 2 cups of mozzarella cheese evenly over the top. Bake for 20 minutes until the cheese is melted, bubbly, and starting to turn golden brown. Let rest for 5 minutes before serving.

Ashley's Pro-Tips:

Add Vegetables: Sneak in extra nutrition by stirring in frozen spinach, diced bell peppers, mushrooms, or shredded zucchini!
Cream Cheese Tip: Cube the cream cheese into small pieces before adding to help it melt faster and more evenly.
Make Ahead: Assemble the casserole (minus the mozzarella) up to 24 hours in advance. Cover and refrigerate, then add cheese and bake when ready (may need extra 5-10 minutes).
Storage: Store covered in the fridge for up to 4 days. Reheat in the oven at 350°F for 15-20 minutes (covered with foil).
Freezer-Friendly: Freeze unbaked (without cheese) or freeze individual portions after baking. Keeps for up to 3 months.
