- Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until no longer pink — about 5–7 minutes. Drain any excess grease.
- Transfer the browned ground beef into your slow cooker.
- Add the mini potatoes (halved if large), frozen mixed veggies, condensed tomato soup, and Rotel (with juices) to the slow cooker. Stir gently to combine.
- Season with salt, pepper, and garlic powder to taste. Stir once more.
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the potatoes are fork-tender.
- Taste and adjust seasoning. Add a splash of beef broth if you prefer a thinner consistency.
- Ladle into bowls and serve hot with crusty bread, cornbread, or biscuits!
