Easy Baked Balsamic Chicken Recipe

Ingredients
  

For the Chicken & Marinade
  • 4 boneless skinless chicken breasts
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 garlic cloves minced
  • 2 pints cherry tomatoes halved

Instructions
  1. Preheat the oven to 425°F.
  2. Prep the chicken: Pat the chicken breasts dry with a paper towel. Cover with plastic wrap and use a meat mallet or rolling pin to pound them to an even thickness. Place in a 9×13 oven-safe baking dish.
  3. Make the marinade: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, dried basil, salt, pepper, and minced garlic until well combined.
  4. Marinate the chicken: Pour the marinade over the chicken and flip each breast to coat evenly. Let marinate for at least 10 minutes. Then add the halved cherry tomatoes to the dish.
  5. Bake for 20–25 minutes, or until a meat thermometer inserted into the thickest part of the chicken reads 165°F.
  6. Garnish & serve: Sprinkle with chopped fresh parsley and serve alongside your favorite sides.
