Tender shredded chicken slow-cooked with ranch seasoning, then stirred together with cream cheese, cheddar, mozzarella, and crispy bacon? Y’all, it is everything. You dump it in the crockpot in the morning and come home to the most incredible smell and a dinner that’s already done. Serve it on toasted buns, over rice, on a baked potato — honestly the options are endless. This one is a non-negotiable weeknight staple and I am not apologizing for it!

Why You’ll Love This Crockpot Crack Chicken
- Dump and go: 10 minutes of hands-on prep in the morning and dinner handles itself all day.
- Incredibly versatile: sandwiches, rice bowls, baked potatoes, wraps, stuffed peppers — it works for everything.
- The ultimate crowd-pleaser: ranch + bacon + three cheeses + shredded chicken. There is no losing here.
- Great for meal prep: makes 8 generous servings and reheats beautifully all week long.
- Kid-approved every single time: my kids ask for this by name and that is the highest compliment I can give a recipe!
Future-you is going to be so glad you started the crockpot this morning. This is the kind of dinner that makes everyone at the table happy — and that’s everything!
What Goes Into This Crockpot Crack Chicken
Every ingredient in this crockpot crack chicken has a job to do, and together they create pure magic. Here’s what you need:
Chicken breasts — one and a half pounds of boneless skinless chicken breasts. They cook LOW and SLOW, which means they come out incredibly tender and shred effortlessly with two forks. Resist the urge to cook on HIGH — it tends to dry them out and we want that fall-apart juicy texture!
Ranch seasoning — one packet of dry ranch seasoning mix does all the heavy flavor lifting here. It infuses every single strand of chicken with that tangy, herby ranch taste we all love. Do not skip this — it is the heart of the recipe!
Cream cheese — one full brick of cream cheese, cut into cubes and added at the end while the chicken is still hot. It melts into the most luxuriously creamy sauce that coats every piece of chicken. Make sure it’s at room temperature so it melts smoothly and evenly!
Three cheeses — sharp cheddar and mozzarella melt on top and create the most gloriously gooey, pull-apart topping. I like sharp cheddar for its flavor punch, but Colby Jack or Monterey Jack would also be absolutely delicious here.
Bacon — eight ounces of cooked, crumbled bacon stirred in at the end. Real bacon is absolutely worth it here — it adds a smoky, salty contrast that takes this from great to “I need the recipe immediately.” You can absolutely use pre-cooked bacon to save time!

Let’s Cook!
- Step 1: Spray a 6-quart crockpot with nonstick spray. Place chicken breasts inside.
- Step 2: Pour chicken broth over the chicken, then sprinkle ranch seasoning evenly on top.
- Step 3: Seal and cook on LOW for 4 hours until chicken is cooked through and tender.
- Step 4: Use two forks to shred the chicken directly in the crockpot.
- Step 5: Add cream cheese cubes, ½ cup cheddar, and all the mozzarella. Replace lid and let the cheeses melt for 10 minutes in the residual heat.
- Step 6: Stir well, then fold in half the bacon and half the green onions. Sprinkle remaining cheese and bacon over the top. Replace lid for 5–10 more minutes until cheese melts.
- Step 7: Serve garnished with remaining green onions on sandwiches, rice, or baked potatoes.
Ashley’s Pro-Tips
Always cook on LOW — HIGH heat dries out chicken breasts. LOW and slow gives you the most tender, juicy, shred-able chicken every time.
Room temp cream cheese — pull it out of the fridge when you start the crockpot in the morning. By the time you’re ready for it, it’ll melt perfectly.
Use rotisserie chicken to skip the wait — stir cooked shredded rotisserie chicken directly into the ranch broth on the stovetop with the cheeses for a 20-minute version!
Serve on toasted buns — toast your sandwich buns while the cheese melts at the end. The crunch against the creamy filling is absolutely incredible.
Storage & Pairing
Fridge: Store in an airtight container for up to 3 days. Reheat gently on the stovetop or microwave with a splash of broth to loosen.
Freezer: Freeze for up to 3 months. The cream cheese texture changes slightly after freezing but the flavor is still phenomenal.
Serve with: Toasted brioche buns, fluffy white rice, baked potatoes, low-carb lettuce wraps, or stuffed into bell peppers.
