- 6 Green Onions whites and greens separated
- 1/2 cup Diced Red Onion optional
- 5 cloves Garlic minced
- 1.5 lbs Ground Pork
- 1 teaspoon Grated Fresh Ginger
- 1 can 8 oz Water Chestnuts, chopped (optional)
- 1 tablespoon Sriracha
- 1 bag 14 oz Coleslaw Mix
- 3 tablespoons Soy Sauce or coconut aminos
- 1 tablespoon Rice Wine Vinegar
- 1 cup Shelled Edamame
- 1/8 teaspoon Freshly Cracked White Pepper
- Salt to taste
- 4 large Eggs for topping
Method
- Instructions:
- Prep the Pan: Heat a large 12-inch skillet or wok over medium heat. When the pan is warm, add 2 tablespoons sesame oil and swirl to distribute. Heat until the oil is hot and shimmery (1-2 minutes).
- Sauté Aromatics: Add the white parts of the green onions, red onion (if using), and minced garlic. Sauté, stirring frequently, until the onions begin to soften and turn translucent (approx. 5 minutes).
- Brown the Pork: Add the ground pork, fresh ginger, water chestnuts (if using), and sriracha. Cook, breaking up the pork into small crumbles, until browned and cooked through (7-10 minutes).
- Add Veggies: Stir in the coleslaw mix, soy sauce, rice wine vinegar, edamame, and white pepper. Stir until well incorporated and the cabbage begins to wilt.
- Fry the Eggs: In a separate small skillet, fry the 4 eggs to your preferred doneness (sunny side up or over easy works best).
